The production of Modified Tapioca Starch E1420 requires an esterification reaction combining starch of vegetable origin with vinyl acetate or acetic anhydride. Therefore, the starch molecules have been modified and have the following properties:
- Non-ionic, no positive or negative charge, less affected by electrolyte
- Prevents starch degradation (amylose radicals)
- Low gelatinization temperature (lower the curing temperature of starch, increase viscosity, increase water absorption and good stickiness)
