Surimi is a processed seafood product made from finely minced fish, usually white fish like pollock, that is shaped and flavored to resemble crab, shrimp, or other seafood. It is widely used in products like imitation crab sticks, sushi, and seafood salads. 

Modified tapioca starch CANFLO, NOOFLO, CRISFLO is used in surimi production to improve the texture and binding of the fish paste. It helps create a firm, cohesive structure that holds the surimi together, giving it the desired bite and elasticity.
