As we all know, modified starch is starch derived from plants such as wheat, potato, corn – corn, tapioca – cassava and these starches have been modified in its internal structure by different physical and chemical methods.

Currently, factories and facilities mainly use modified flour derived from cassava roots (tapioca) in food, paper industry, textile and other industries for the following reasons:

100% Non-GMO (Non-Genetically Modified Organism) this means that the tapioca tuber has not been genetically modified or crossed with another plant. What is modified starch?

From a scientific perspective, simply understood, modified starch is a type of starch that has changed its physical and chemical structure under the influence of agents such as temperature, Acid, Enzymes, Oxidants….

Modified starch is usually derived from tapioca starch, potato starch, tapioca starch, corn starch.

This means that the molecular structure of starch granules will be changed such as creating shorter chain polysaccharide molecules or attaching other substances and groups to the starch molecule. Depending on each change, different types of starch are produced.

Structure and classification

Currently, modified starch is made mainly by three main methods:

– Method of physical modification

– Chemical modification method

– Enzyme denaturation method

The main types of starch used today in Vietnam according to Circular No. 27/2012/TT-BYT guiding the management of food additives are denoted as follows: E1400, E1401, E1402, E1403, E1404, E1405, E1410, E1411, E1412, E1413, E1414, E1420, E1421, E1422, E1423, E1440, E1442, E1450, E1451. Specifically, like:

  • Dextrin (INS 1400): Made by treating starch hydrochloric acid.
  • Alkaline-modified starch (INS 1402): Treat starch with sodium hydroxide or potassium hydroxide
  • Bleached starch (INS 1403): Treatment of starch with Hydrogen peroxide oxidized starch (INS 1404, E1404): Starch is reacted with sodium hypochlorite.
  • Enzyme-treated starch (INS 1405)
  • Monostarch phosphate (INS 1410, E1410)
  • Distarch phosphate (INS 1412, E1412): Starch is esterified with sodium trimetaphosphate
  • Acetylated starch (INS 1420, E1420): Starch is esterified with acetic anhydride
  • Hydroxypropylated starch (INS 1440, E1440): Starch ether with propylene oxide
  • Starch sodium octenyl succinate (OSA) starch (INS 1450, E1450)
